The Greenville Convention Center’s Culinary Delights.


One of the many things we take pride in, here at the Greenville Convention Center and OVG 360, is our hospitality and kitchen staff. Who are fully equipped in making your event one to be remembered and wanted to be repeated. We do this with the help of our amazing, and award-winning kitchen staff. Our chef, Fergus Davidson, creates culinary masterpieces catered to your events and invitees’ exact specifications.  

We were able to sit down with Fergus and pick his brain about a variety of topics of the job he carries so effortlessly here at the Greenville Convention Center.  

Q: What do you enjoy most about catering events at the Greenville Convention Center, and are there any memorable moments or experiences you’d like to share?  

A: I love the daily food service style change-up along with the challenges presented of large-scale events. We can go from Buffet, Plated, Reception, to Concession style all in the same day. Some of my more memorable events are ones that tend to have more thematic based menus. It’s nice to be taken out of your comfort zone and prepare food from other nations for large groups of people. 

Q: How do you accommodate dietary restrictions and preferences for guests attending events at the convention center?    

A: We have produced a percentage breakdown for your more mainstream dietary requests. Gluten free, Vegetarian, and Vegan entrees are made regardless of any pre orders. Guests always have the option to reach out to whomever is hosting their event, who will intern reach out to us with any additional dietary restrictions. 

Q: How would you describe your cooking style and the cuisine offered at the convention center?  

A: My cooking style has been totally influenced by my parents. Growing up in a Latin American household, bold flavors and fresh ingredients were always in the forefront of every dish. Dinners at my house were an occasion not just a meal. Here at the Convention Center, we strive for very similar experiences for all our guests.    

Q: What are some of your favorite dishes to prepare for events at the convention center, and why?  

A: Hands down my favorite dish that we prepare here at the Convention Center is a Saltimbocca inspired chicken breast. Between the salty Feta, Mozzerella mix, and the shaved Prosciutto Ham topping and if you pair that with a Sundried Tomato Cream Sauce it’s a win. Of course, who would complain about adding some Cheesy Herbed Risotto.
